Sunday morning breakfast! My yummy, alternative pancakes with homegrown & wild berries, homegrown bananas, bought in kiwi. Delicious!
Dairy, gluten, sugar, egg free Pancake recipe..
65g of tigernut, 65g of chestnut or rice flour and 45g sweet potato flour.
1 tsp baking powder
1 flaxseed or chia seed egg-(1 tbsp flaxseed or chia seeds, 3 tbsp water presoaked for 10 mins)
250-260ml rice or nut milk
Mix the dry ingredients together, add the wet ingredients. Allow to stand for 20 mins before using.
Drop a soup spoonful of the mix into a heated, lightly oiled frying pan, do as many as required. Fry for about 4-5 mins each side.
Serve with fruit of choice and a few nuts for any energy packed, nutritious,
delicious meal.
