You don't need to do without your favourites when ditching gluten and cereals..This tried and tested recipe is a popular one in our home...
Ingredients:
190g almond flour
100g coconut flour
1 tsp each of bicarbonate of soda and sea salt
3 tsp mixed spice
2 tsp cinnamon
300g dried vine fruits (soak for 15 minutes in hot water, then drain before use)
100g broken walnuts
Zest of 1 orange
8 eggs
75g olive oil
2 tsp vanilla essence
About 15 whole almonds for decoration if desired.

Combine all the dry ingredients and mix together, add the walnuts and zest.
Separately, mix the wet ingredients.
Slowly add the wet ingredients to the dry ingredients.
Add the vine fruits.
Line a cake tin with baking paper, place the mix into the tin, spread evenly. Top with whole almonds.
Bake in an oven at 150 degrees for a fan oven for 50-60 minutes.
