Adding more plants to our diet is proven to be very beneficial to our health and provides an abundance of nutrients. This delicious, crunchy, munchy, raw, fresh, vegetable salad is easy to make and is an ideal accompaniment to a main dish or can be enjoyed equally by itself. I tend to serve it for lunch, particularly if I’m a bit short of salad leaves from the garden, and sprinkle with toasted mixed seeds or pine nuts.

Ingredients in this ‘nightshade-free’ batch are:

White cabbage, carrot, apple, red onion, celery & cucumber.

Grated beetroot, chives and fresh herbs would be great additions too.

You can add tomatoes and bell peppers, if you are nightshade tolerant, for more diversity.

Chop or grate all ingredients finely, mix well in a large bowl. I then add the juice of a lemon or apple cider vinegar.

Serve drizzled in extra-virgin olive oil with a few sprigs of parsley or cilantro.
